Signature Beef Noodle Soup with Hand-pulled noodles

Dunhuang makes hand-pulled noodles and beef noodle soup in the Lanzhou style. The noodles I went with are the "wide" noodles, which makes for a deliciously slurpy experience that could stand to be a bit chewier (I recommend the thick noodles for that), but they are as delightfully inconsistent as any lamian you'll find around -- which is definite proof they are hand-pulled fresh in the kitchen. The soup is beefy and flavorful, lighter than the Taiwanese counterpart and less spiced than other beef noodle soups you may find. The chili is not particularly spicy here, but I think it does a good job. In the soup they add in cilantro, which I think they could stand to add more of. For $23 it comes with a side (I got shredded potato salad) and a drink (Diet Coke, in my case).
