Classic Fukuoka-style Tonkotsu Ramen
Ramen DANBO
Ramen DANBO specializes in Fukuoka-style tonkotsu ramen. I am not a particularly big tonkotsu fan; it's generally too heavy for my tastes, and too one-dimensional, but I like Ramen DANBO. DANBO is lighter than a lot of tonkotsu ramens you find in NYC (or the US generally), and the noodles are appropriately chewy and thin. The porkyness shines through and it tastes very much like the ramen in Fukuoka. It reminds me of Shin Shin in Fukuoka, which is a top-tier bowl of ramen that I think is worth seeking out in Fukuoka. You could absolutely do worse for a bowl of ramen in NYC; I think it's better than Ichiran, for comparison.
